i was going to email you the recipe for lemon muffins but i can't find your email address so i will post it here.
3/4 cup sugar 2 cups s/r flour
75g melted butter 1 cup milk 1 lightly beaten egg grated rind of two lemons
sift flour and sugar. make a well in the centre of the ingredients and add wet ingredients. mix until just combined. bake in muffin trays for 15 - 20 minutes on 180C.
when making variations i just removed the rind and stick other things in. perhaps less milk if you add frozen berries - but see how you go.
